I was looking for something to make that'd use some leftover cooked chicken breasts I had and make them taste 'different'. I just added the spices into the chicken, bean mixture. Added a can of corn (to clean my pantry) and a bit more enchilada sauce because I didn't want left-over sauce. The casserole was great! Even my picky spouse who is not a great fan of Mexican food really enjoyed it. A great way to change up the taste of leftover chicken.

Absolutely loved these enchiladas, I did use the amount of chicken from another recipe (6 chicken breasts) and the Enchilada Sauce (the one without any tomato sauce) by Anna Maria from this site and it was absolutely delicious. My daughter couldn't stop raving about it.

I usually make my enchiladas the old fashioned way and roll each one up in the pan. This looked easier and I had some rotisserie chicken to use up, so I thought I would try it!! Seriously, you almost can't even tell the difference in the long version as opposed to this short easy version!! Absolutely delicious!! I did quick fry the corn shells cuz I do it when I do the long version as I feel it makes them thinner and melt in your mouth easier!! No more intensive labor over enchiladas for me anymore!!! This recipe is a keeper for sure!!

This recipe was my first attempt at cooking any sort of Mexican food, as well as my first experience working with cumin and coriander spices. I must say that I was pleasantly surprised. The dish was absolutely delicious -- both my boyfriend and I loved it. There was so much flavor in this casserole, and we both went back for seconds. It was also an extremely easy recipe, especially for a beginner cook like me, so I would recommend it to anyone who is just starting out or wants to try their hand at Mexican cooking. I didn't change anything about the recipe, and wouldn't. Fantastic!

very delicious however I made some changes. I toasted the corn tortilla's on the oven sprayed w/ pam. Marinated the chicken w/ some garlic powder, salt and lime. Also chopped up some onion and garlic and added to the chicken when cooking. I spread light sour cream to the tortilla's as I was layering and also threw in some corn to the chicken/bean mixture. I also left out the coriander. VERY good :) will make again. I also doubled the recipe so I could freeze the leftovers. thanks! :)
