There is no where on the directions where it says to soak the quinoa. Unless you watch the video, then it briefly mentions something about soaking it but even then it’s so quickly said you may miss it. This has a lot of things in it that are normally very hard without cooking a LONG time. The black beans, the quinoa and even the frozen corn. So to throw this stuff in a pan and not have it already cooked a little makes it come out quite crunchy or in my opinion....disgustingly hard. They call it “aldente”. I call it uncooked and nasty. So although this was a HUGE problem for me....I still opt to give this recipe 4 stars bc I don’t want to discourage anyone from making this. It has very good seasonings and tastes wonderful aside from the hard thing I just explained. So if I made it wrong....I apologize. I don’t know how I could have not made it correct though because I followed the instructions well and to the “t” so to speak. Idk what else to say. lol. Good recipe. Just know that if you like you
